We had booked a table to enjoy the last seafood evening of the year at the Idyllen Inn. The house, a dream of turn-of-the-century romance, was like stepping into a fairy tale. It is like nothing else, and must be experienced to be described. We were warmly welcomed and shown to our beautiful table for two by a window overlooking the lush garden. The waiter radiated warmth and a heartfelt calm, which made us immediately feel comfortable in the special environment. The seafood buffet was laid out in the candlelit turn-of-the-century kitchen around a large, sturdy dining room table. On the wood stove was a hot lobster soup and a lukewarm chanterelle pie, and dessert was laid out on a bench together with the most beautiful little coffee cups. We picked odd plates from a motley collection of antique china from a beautiful cabinet, and began our culinary journey. On the table were half-cooked lobster, almond mussels, smoked fresh shrimp, fresh shrimp, sea crayfish, Vannamei shrimp, dressing, freshly cooked crab, more mussels of various types and sizes, oysters, crayfish, etc. However, I chose to try the lobster soup first, an elegant dish with shellfish and fish. The aroma revealed that this was a dish cooked by a very knowledgeable chef. The first spoonful set the bar high, this was probably the best lobster soup I have ever eaten. The soup was full of crunchy umami, notes of the sea and lobster and an intense saltiness that was just right on the edge. A delicious experience, which was accompanied by a freshly baked delicious bread with cumin notes. After this delightful experience, I explored the shellfish, so expertly, confidently and tenderly prepared. Nothing extra took away the subtle flavors. Everything was simple and stripped down, just as it should be when the ingredients are of the highest quality. The fresh shrimp revealed themselves by keeping their long spines, whereas frozen shrimp have these broken off. The Vanammei shrimp had a mild nutty note, probably from walnut oil. The aroma of the crayfish surpassed all the previously mediocre crayfish I had previously eaten, and made me finally understand their good reputation. Lobster is nothing to me, I probably lack the receptors needed to experience the taste. To me, lobster only tastes salty. The mussels were a feast of flavors, and the crab, as usual, was nothing to me. I realized that I should have taken the course on how to open oysters, now the delicious shellfish were left untouched on their bed of ice. The smoked shrimp lacked their usual mild appearance, from the depth of the smoke's entire flavor palette, these shrimp appeared as raw-skinned beauties. I have probably never eaten a better smoked shrimp. After this palette of delicious flavors, I realized that the wonderful lobster soup was not finished with me. I enjoyed another plate, and tasted the wonderfully creamy chanterelle pie. The pie itself was a masterpiece, where the egg tart was a happy combination with the fine mushroom. When it was time to try the dessert, my satiety was beyond possible. The seemingly simple chocolate cake was, however, a dream and not at all difficult to enjoy, a crispy roof hid a tasty chocolate and nut pie that was complemented by lightly whipped cream. To this I drank a very good coffee, full of aroma and roasted depth of flavor. Since the cups had very little space, there was more than enough. Throughout the entire session, our waiter was attentive, charming and interested in making sure that our experience was the very best. All filled plates were cleared away immediately, making room for a new one. The service was discreet but cordial, and it was a miracle that the waiter alone managed to serve everyone in the room and handle the service with full control and a smile. We left Värdshuset Idyllen with a feeling of having experienced a very special meal. This qualifies as one of the best servings I have experienced, and we are looking forward to the Christmas table in December. It can't be anything but magical, a visit to Värdshuset Idyllen is highly recommended.
